[What is ROSU?]
When you visit Yakiniku restaurants across Japan, a lot of them will have ロース, which means Loin, on their menu. This usually means a cut of Chuck Roll, Ribeye, or Striploin. Restaurants will then have grades of Loin, and they usually vary between these different cuts.
This was at Yakiniku Hanana in Ashiya, a great shop we enjoy stopping by near where we live. The restaurant sources Wagyu from Kyushu Island where Kagoshima and Miyazaki are, and offer a variety of cuts. Kokufu San, the owner of the restaurant, hand picks the cuts of beef they offer. There usually are a variety between marbled cuts and leaner cuts for the guests to enjoy.
They also offer their home made Yakiniku sauces and sides that go really well with the Wagyu selection.
